Alright this one is really obscure, and I have yet to find it myself to cook with, but everyone must know about jackfruit.  This post will be short, but I wanted to make sure I mentioned it, because wow!  A lot of people haven’t heard about jackfruit, and everyone should.  :)

Jackfruit is this amazing fruit of a species of mulberry tree that grows in tropical regions and is native to South and Southeast Asia.  The ripe jackfruit is naturally a bit sweet, and used in dessert dishes, but the young unripe jackfruit – that’s what vegans should know about, because of its texture.  It is uncannily like chicken, so it makes a wonderful totally natural plant substitute for chicken.  I’ve had it once, in an Indian curry dish, and it was so like chicken it was hard for me to believe it wasn’t chicken!  I can’t wait to find it to cook with myself.  I love being able to replicate that feeling 100% naturally – plus you get the bonus that, as with all plant foods, jackfruit is filled with a plethora of nutrients – vitamins, minerals, antioxidants, phytonutrients… the list goes on.

Have you tried jackfruit?  If so, how is it been prepared or what have you done with it?  I’d love ideas!

I haven’t tried it yet, since I’m still on the jackfruit hunt, but a quick Google search revealed this BBQ Pulled Jackfruit Sandwich recipe, which kind of looks amazing.  Click on over also just for the chance to see what jackfruit looks like in action – doesn’t it look like chiken?!  So. weird….

Enjoy!!
